Le Relais du Roy’s leg of salt-meadow lamb is slow-cooked in local beer so the meat is nice and tender! Salt-meadow lamb is the region’s most famous dish. The meat is of a high quality and distinctive flavour that is loved by foodies the world over. The lambs themselves feed on iodised saltwater vegetation from the coastal pastures of Mont Saint-Michel bay.
